Surviving the Polar Vortex Easy Thai Beef Salad Recipe


I have to admit we were all blown away with the recent subzero temperatures recently experienced. Schools were closed, pipes were froze and throughout it all we had to EAT!

Luckily for my family my husband gallantly went out and braved the stores to purchase tons of survival supplies. When he returned home he created a feast using left over roast beef that the kids and I  are still talking about. My husband is the best "rustic" cook I know. He doesn't measure he just adds and taste until we have a finished product. Listed below are the ingredients he used to make an awesome Thai Beef Salad.

Thai Beef Salad

  • roast beef (we used left over's) approx. 4 cups
  • coleslaw mix (prepackaged)
  • small red onion sliced thinly 
  • 1 whole cucumber sliced thinly
  • handful radishes sliced thinly
  • bean sprouts
  • Asian rice noodles
  • Sesame Ginger Dressing

You can substitute with chicken, fish add mandarin oranges the list is endless. You're only limited by your imagination or maybe your pantry contents.
